Leather has a "nap" direction. Stroke it one way and it is very smooth,
stroke in the other direction and it is rough (or at least not as smooth).
So the knuckles have a "nap" direction. You are correct that this direction
is not indicated on replacement knuckles. Nor is grain direction indicated
on a piece of wood from a lumber yard - yet in many applications grain
direction is important. The professional is expected to be able to identify
these characteristics and respond accordingly.
